Ingredients
1 fresh ripe pineapple
1/4 cup light rum
5 oz granulated cane sugar
1 lb vanilla ice cream
1/2 tsp ground cinnamon
Directions
Peel pineapple and core if desired. Slice pineapple about 3/4 inch thick.
In a non stick frying pan, melt sugar in rum, on low heat.
When the syrup comes to a boil, add the pineapple slices, sprinkle with cinnamon and cook for 5 minutes turning slices two or three times.
Arrange pineapple slices on dessert plates and let cool.
When ready to serve, put a scoop of vanilla ice cream in the center of each pineapple slice and pour over the remaining syrup.
